How to make spinach meatballs with broccoli puree

I had time wanting to make some spinach meatballs . I really had time wanting to do anything with spinach .

I also had a debt to ... spinach? Because I had bought some and they forgot me in the fridge for a long time and well, they turned into an unpleasant green mass.

I paid my debt? with this recipe for vegetarian meatballs.

As I've been Mediterranean lately, but on the African and Asian side, I decided to make a spinach recipe that paid homage to this incredible region of the planet.

Spinach, garam masala and walnuts.

I lacked some type of companion in the form of cream or puree. Broccoli? Yes, why not? This made a vegetarian meal complete.

Spinach meatballs with broccoli puree

Ingredients for meatballs

  • Spinach leaves (many)
  • 50 grams of peeled nuts
  • 1 teaspoon garam masala
  • 2 yolks egg
  • 1 teaspoon bread crumbs
  • Salt

Ingredients for broccoli puree

  • Fresh broccoli
  • 1 teaspoon butter
  • 1 teaspoon cream
  • Salt
  • Pepper

Preparing the spinach meatballs:

Clean the spinach very well and chop it with a knife.

Put a frying pan with olive oil. Pass the spinach leaves through this pan until they are reduced in size and the liquid evaporates (they will reduce a lot, that's why you need to do a lot).

Add well crushed walnuts, salt and a teaspoon of Garam Masala. Stir well and transfer everything to a plastic container.

Now you are going to make the meatballs: add two egg yolks and a teaspoon of breadcrumbs to the mixture, mixing everything well.

Make compact balls and pass them through a plate with bread. Make sure they are covered on all sides.

Heat enough oil in a pan or pot. Fry the spinach meatballs for a couple of minutes.

When ready, let them dry a little on absorbent paper.

Broccoli puree preparation

Heat a pot with water and a pinch of salt.

When it starts to boil add broccoli previously washed and cleaned (do it cautiously, sometimes they are so fresh that they bring animals living on their stems).

After 10-15 minutes try a fork that are ready, remove them from the fire, strain them, let them cool and put them in a deep container.

Add a teaspoon of butter, one of cream and crush well until making a uniform puree. You can use a food processor too.

You can put a pinch of nutmeg if you like.
